About this product
Tuber melanosporum, the winter black truffle, is one of the great seasonal ingredients, and Spain is now one of its most important sources. The inland highlands of Valencia, with their limestone soils and cold continental winters, produce truffles with deep earth, musk, and forest-floor intensity that stand alongside the best from anywhere in Europe. The season is short and the handling matters. Harvested between December and March with trained dogs, the truffles are graded and moved fast, because aroma is perishable and every day of delay costs perfume. Speed from ground to pass is the whole game, which is why a short, direct supply chain is worth more here than on almost any other product. Treat it as a finishing ingredient, never a cooked one. Shave it thin over hot pasta, risotto, scrambled eggs, or a focused seasonal course at the moment of plating, so the heat of the dish lifts the aroma at the table. Store in rice or dry paper in the fridge and use within five days of delivery. A White Burgundy or aged Nebbiolo completes a tasting course.
